Cooking for two isn’t as simple (or cheap) as it seems. You see, Bae and I are both picky eaters. To further complicate things, I’m allergic to shrimp and anything made from cow’s milk. We have figured out each other’s eating habits after living together for a couple of years and (finally) agree upon some meal ideas that have made it into our regular meal rotation. Bone-in chicken is super affordable. Marinating the legs and thighs in garlic, fresh citrus juice, and seasonings and then roasted on 375 degrees makes them healthier than smothering or frying. It’s so good paired with simple fresh greens, or roasted vegetables.
Chicken Apple Sausage Bolognese
Who doesn’t love a good bolognese? You can put whatever protein you want in it. The last time we made bolognese chicken apple sausage was the star, adding a slightly sweet, smoky flavor to the sauce.
We don’t eat meat in every meal. This easy vegetarian bowl consists of roasted Brussel sprouts, mushrooms, sweet potatoes, red onion, and a few cloves of garlic.

Here’s another meatless meal with black beans and those roasted vegetables again. I used asparagus the last time I made this, but any vegetable you have on hand will work. They’ll be refreshing and be filling over a bed leafy greens, especially topped with avocado.
