This Cornish game hen recipe is so easy and delicious. I made it last January for our New Year’s Day meal; I’m thinking of cooking it again for our Easter dinner main dish. Rubbed with my homemade creole seasoning, this version of Cornish hen is baked in a cast iron skillet, yielding maximum flavor with minimal effort. Perfect for lazy cooks like me!
Creole Cornish Game Hen Recipe
- Creole seasoning (recipe here)
- Grapeseed oil
- Large Cast Iron skillet
Preheat oven to 400º. Remove cornish hen from packaging. Rinse and pat dry with a paper towel. Split each bird in half, down the middle. Coat Cornish hen liberally with creole seasoning. Add a few tablespoons of grapeseed oil to a large cast-iron skillet, coating thoroughly. Place Cornish game hen inside skillet, and then into the oven, cooking for 1 hour.
Baste every 20 minutes, checking for doneness around 45 minutes. Remove from oven and rest for 5 minutes. Serve with your favorite sides.
